Spaghetti Lamb Ragu Recipe
Ingredients:
- 500g lamb mince
- 1 onion, finely chopped
- 2 garlic cloves, minced
- 2 carrots, finely chopped
- 2 celery stalks, finely chopped
- 400g canned chopped tomatoes
- 2 tablespoons tomato paste
- 1 cup beef or vegetable stock
- 1 teaspoon dried oregano
- 1 teaspoon dried thyme
- Salt and pepper, to taste
- 400g spaghetti
- Grated Parmesan cheese, to serve
- Fresh basil leaves, to garnish
Instructions:

Cook the Lamb:
- Heat a large saucepan over medium heat and add the lamb mince. Cook, breaking up the mince with a spoon, until browned.

Add Vegetables:
- Add the onion, garlic, carrots, and celery to the saucepan. Cook, stirring occasionally, for about 5 minutes, or until the vegetables start to soften.

Add Tomatoes and Stock:
- Stir in the canned tomatoes, tomato paste, stock, oregano, and thyme. Season with salt and pepper.

Simmer:
- Bring the mixture to a simmer, then reduce the heat to low. Cover and cook for about 1 to 1 1/2 hours, stirring occasionally, until the lamb is tender and the sauce has thickened.

- Cook the spaghetti according to the package instructions until al dente. Drain and set aside.

- Add the cooked spaghetti to the lamb ragu and toss to combine.
