Spaghetti Lamb Ragu Recipe

Ingredients:

  • 500g lamb mince
  • 1 onion, finely chopped
  • 2 garlic cloves, minced
  • 2 carrots, finely chopped
  • 2 celery stalks, finely chopped
  • 400g canned chopped tomatoes
  • 2 tablespoons tomato paste
  • 1 cup beef or vegetable stock
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • Salt and pepper, to taste
  • 400g spaghetti
  • Grated Parmesan cheese, to serve
  • Fresh basil leaves, to garnish

Instructions:

  1. Cook the Lamb:

    • Heat a large saucepan over medium heat and add the lamb mince. Cook, breaking up the mince with a spoon, until browned.
  2. Add Vegetables:

    • Add the onion, garlic, carrots, and celery to the saucepan. Cook, stirring occasionally, for about 5 minutes, or until the vegetables start to soften.
  3. Add Tomatoes and Stock:

    • Stir in the canned tomatoes, tomato paste, stock, oregano, and thyme. Season with salt and pepper.
  4. Simmer:

    • Bring the mixture to a simmer, then reduce the heat to low. Cover and cook for about 1 to 1 1/2 hours, stirring occasionally, until the lamb is tender and the sauce has thickened.
  5. Cook Spaghetti:

    • Cook the spaghetti according to the package instructions until al dente. Drain and set aside.
  6. Combine:

    • Add the cooked spaghetti to the lamb ragu and toss to combine.
  7. Serve:

    • Serve the spaghetti lamb ragu hot, topped with grated Parmesan cheese and fresh basil leaves.
