Cauliflower Crispy 65 Recipe

Description: A delicious and crispy cauliflower dish inspired by Chicken 65, coated in chickpea flour and garnished with fried curry leaves and green chilies.

Ingredients:

  • 1 medium cauliflower, cut into florets
  • 1 cup chickpea flour (besan)
  • 2 tablespoons rice flour
  • 1 tablespoon ginger-garlic paste
  • 1 tablespoon lemon juice
  • 1 teaspoon red chili powder
  • 1/2 teaspoon turmeric powder
  • 1/2 teaspoon garam masala
  • Salt to taste
  • Water, as needed
  • Oil for frying
  • Fresh curry leaves and green chilies, for garnish

Instructions:

  1. Prepare the Cauliflower:

    • Blanch the cauliflower florets in hot water for 3-4 minutes. Drain and set aside.
  2. Make the Batter:

    • In a bowl, combine chickpea flour, rice flour, ginger-garlic paste, lemon juice, red chili powder, turmeric powder, garam masala, and salt.
    • Add water gradually to make a thick batter, ensuring there are no lumps.
  3. Coat the Cauliflower:

    • Dip each blanched cauliflower floret into the batter, ensuring it is well-coated.
  4. Fry the Cauliflower:

    • Heat oil in a deep frying pan over medium-high heat.
    • Fry the coated cauliflower florets in batches until golden brown and crispy. Drain on paper towels.
  5. Garnish:

    • In the same oil, fry fresh curry leaves and green chilies until crisp. Use these to garnish the fried cauliflower.
  6. Serve:

    • Serve the crispy cauliflower 65 hot as a snack or appetizer, optionally with a side of mint chutney or sauce of your choice.
